"Wexford Wine: Excellence Rooted in Memory and Craft" is a structured programme designed to understand what makes Wexford wine unique: its composition, bouquet, colour and the technical decisions that shape its character. The course explores how land, history and advanced enological and viticultural practices converge to create wines of distinctive quality, offering a clear reading of the region’s long summer light, singular soils, slow ripening and the scientific precision behind each stage of production. It is particularly suited to advanced wine enthusiasts and professionals seeking a deeper, more rigorous understanding. The programme also highlights the cultural memory that supports this tradition —from the legacy of the Wine Geese to the Irlandais de la vendange and medieval references to wine as a mark of hospitality— providing the context needed to recognise Wexford’s sensory profile and to develop refined pairings with local produce. Participants receive dedicated learning materials, including exclusive online content, which complement the sessions and support a deeper, structured understanding of Wexford’s wines. Cancellation Policy
Booking Amendments - Only one amendment is permitted per booking. - Assignation of a new booking date and time is subject to availability, and will be agreed with the customer. - Amendments requested more than 15 days before the scheduled start time will be charged an administrative fee of €15. - Amendments requested between 15 days and 5 days before the scheduled start time will have an administrative fee of €25. Cancellations - Cancellations requested more than 15 days before the scheduled start time will receive a refund of 70% of the amount paid, minus an administrative fee of €15. - Cancellations requested between 15 days and 5 days before the scheduled start time will receive a refund of 50% of the amount paid, minus an administrative fee of €15. Cancellations by The Old Roots In the event that we must cancel or reschedule a tour due to weather conditions, safety concerns, operational requirements or any other reason, visitors will be offered: - An alternative date and time, or - A refund under the same payment method used for the original booking. No administrative fee will apply in these cases.
